The signature is 'yaji' — a dry spice mix whose core ingredients are kuli-kuli (ground dry-roasted peanut cake), dried ground chili, ginger and powdered bouillon. Every suya vendor guards their own yaji recipe. The meat is traditionally beef (sirloin or flank), sliced thin and skewered on thin sticks, then grilled quickly over charcoal. Chicken and goat suya are also popular variants. The word 'suya' comes from the Hausa 'tsire'.
