Mafé (also spelled maafe or tigadèguèna in Bambara, meaning 'peanut sauce') originated with the Bambara and Mandinka peoples of Mali, Guinea and Senegal, and spread throughout West Africa during the Mali Empire. Peanuts (groundnuts) were introduced to Africa from the Americas by Portuguese traders in the 16th century and quickly became a staple crop. The best mafé uses pure, unsweetened peanut butter or freshly ground peanuts — commercial brands with added sugar will throw off the balance. Traditionally served with white rice, fonio or couscous.
