The story behind this recipe ▾
Plantain is a staple crop across West and Central Africa. Unlike dessert bananas, plantains are larger, starchier and must be cooked. As the plantain ripens, its skin turns from green to yellow to almost black — the starch converts to sugar, which is why very ripe plantains are essential for alloco (unripe ones stay firm and starchy). In Abidjan, street vendors known as 'allocodromes' sell fresh alloco from pop-up stalls, often paired with grilled fish or an egg. The word 'alloco' likely comes from a Baoulé term for fried plantain.
